Sausage and Egg Sandwich

Serves: 4 | Cooking time: 45mins




• 4 tsp olive oil

• 350g sweet Italian sausage (casings removed)

• 60g extra-sharp Cheddar cheese, sliced

• 4 eggs

• 4 English muffins, split and toasted


1. Heat 2 tsp oil in a large cast-iron skillet on medium.

2. Shape the sausage into four 1/4-inch thick patties with damp hands, add to the skillet, and turn the heat up to medium-high. Flip burgers after browning them for 2 to 3 minutes.

3. Add cheese to the patties and heat for an additional 2 to 3 minutes, or until the sausage is fully cooked.

4. Meanwhile, heat the remaining 2 teaspoons of olive oil in a large nonstick skillet on medium and cook eggs to desired doneness.

5. Add the eggs, melted cheddar, and sausage to the muffin.

6. Serve while hot.
